As ganesh chaturthi is right around the corner, i thought this kolukattai recipe would be a great addition to the list. Although it is not traditionally made on that day, but i would love to add it to the list since this recipe is from the lord ganesh's beloved kolukattai family. Preparation Time: 15 mins
Cooking Time : 30 mins
Serves : 4 to 5
Ingredients:
Rice Flour / Arisi Mavu - 1 cup ( I used readymade rice flour)
Salt - 1/2 tsp
Water - 1 1/2 cup
Thin Coconut Milk - 2 cup (Click here for recipe)
Thick Coconut Milk - 1 cup (Click here for recipe)
Cardamom Powder - 1 tsp
Ghee - 1 tsp
Sugar - 1/2 cup or to taste
Method:
Take rice flour in a bowl and add in water. Mix well so it forms into a smooth batter.
Heat a nonstick kadai and pour this batter in it. Cook this on low heat stiring constantly so it thickens and leaves the sides of the pan and form into a dough.
Remove the dough into a bowl and let it cool a little. Add ghee to it and knead into a smooth dough.
Apply ghee on your fingers. Take small portions from it and form into tiny little balls.
Now heat thin coconut milk in a kadai. Let it come to a good boil.
Once it starts boiling add the small kolukattai in the milk slowly. The milk should be always boiling when you add the kolukattai. So add the balls slowly, dont add it all at once.
Let this cook for 5 mins. Now add in sugar and cardamom powder and mix well.Let this simmer for 2 mins.
Now switch off the heat and add the thicker creamier coconut milk. Mix well and serve.
Serve this warm or at room temp.

Once it boils.. |
Add the balls slowly, so the heat doesn't drop |
Let it boil |
Add some cardamom powder |
Add Sugar and mix well |
Now turn the heat off and add in thicker coconut milk |
Mix well |
